Thyme has a slightly sour flavor, think very mild lemon. which yields an aroma that is hard to miss. To use as a marinade, mix some lemon juice with thyme leaves and baste chicken with this mixture. Add a pinch of dried leaves to enhance your favorite pasta dish, and toss in a couple of sprigs to your fresh salads to kick them up a notch.
