VEGAN MONGGO BOLOGNESE

Ingredients:

  • 1/2 cup chopped carrots
  • 1/2 cup chopped celery
  • 1 tbsp chopped garlic
  • 1 tbsp chopped onions
  • 2 cups vegetable broth or mushroom broth ( 7 grains cube)
  • 1 cup dried monggo
  • 3 cups tomato sauce
  • 1 tsp dried oregano
  • 1 tsp Italian seasoning
  • 2 cups sourghum

Instructions:

Sourghum:

Soak the sourghum overnight

  1. Boil 2 cups and set aside

Instructions for rest of the ingredients:

  1. Heat up a pan. Add a tablespoon of stock.
  2. Add the garlic, onions, carrots and celery .
  3. Add the monggo and the stock.
  4. Cook monggo until softened.
  5. Add tomato sauce, Italian herb mix and oregano.
  6. Simmer till flavours blend.
  7. Serve on top of sourghum
